- 2 Tbsp tomato purée
- 100ml olive oil
- 500g potatoes (peeled and cut into 1cm slices)
For the white sauce
- 50g butter
- 50g plain flour
- 400ml milk
- 1 tsp nutmeg (grated)
- 25g Parmesan (finely grated)
- 1 egg (beaten)
