Slow Cooker Garlic & Lemon Chicken

Ingredients

  • 900g Boneless skinless chicken breasts
  • Salt
  • Freshly ground black pepper
  • 2 Large onions, diced
  • 5 Cloves garlic, crushed
  • 2 Carrots, cut into 2.5cm pieces
  • 1 tbsp. sugar
  • Juice and zest of 2 lemons, divided
  • 4 Sprigs fresh thyme
  • 720ml Chicken stock
  • 150g Frozen peas

Method

  1. In a pan over high heat, sear chicken until golden brown, 2 minutes per side. Season with salt and pepper and place in a slow cooker.
  2. Add the onions, garlic, carrots, sugar, zest and juice of 1 lemon, thyme, and chicken stock, then season with salt and pepper.
  3. Cover with lid and cook on low for 6-7 hours, or on high for 3-4 hours.
  4. Add the peas and cover with lid until warmed through, 2 to 3 minutes.
  5. Finish by adding the  zest and juice of remaining lemon.
  6. Enjoy!
