Beer Infused Welsh Rarebit

Ingredients

  • 25g butter
  • 25g plain flour
  • l00ml strong, dark beer
  • 150g mature Cheddar cheese, grated
  • 1 egg yolk
  • 1 tsp English mustard
  • 4 tsp Worcestershire sauce (or Henderson’s for those in Yorkshire)
  • pinch cayenne pepper
  • 4 thick bread slices
