Feta & Vegetable Pie

Ingredients

  • 1.5 Tbsp Olive Oil
  • 6 sheets of Filo Pastry
  • 500g Spinach
  • 200g Carrots (Peeled and Grated)
  • 28g Parsley (Chopped)
  • 1 tsp Dried Oregano
  • 50g Pine Nuts
  • 150g Feta (Crumbled)
  • 3 eggs (Lightly Beaten)

Method

  1. Preheat oven to 180
  2. Brush a round 20cm cake tin with a little oil and layer 3 sheets of filo in the base and up the sides, brushing each sheet with a little oil
  3. Mix spinach, carrot, parsley, oregano, pine nuts and feta in a large mixing bowl.
  4. Add the eggs and a black pepper and mix thoroughly
  5. Pour mix into the tin and fold over the excess filo over the top
  6. Put remaining 3 filo pastry sheets on top, brushing each with a little oil
  7. Bake for 35-40 mins, until golden and crisp
  8. Enjoy, with a salad!
